Post-refurbishment, the ground floor restaurant of the Thistle Westminster is a picture of modernity with a Mediterranean warmth, both directly in the sunny service of manager Giovanni, and not-so-directly in the deep-red walls displaying evocative Tuscan country scenes. The simple, healthy food (no rich sauces in sight) is best exemplified in the grilled seabass, and half a chargrilled baby chicken marinated in rosemary and lemon juice - both served with new potatoes. Pick of the international wine list is a rose pinot grigio.
